Ingredients

  • 10 Medjool dates, pitted
  • 10 tbsp almond butter (smooth, unsweetened)
  • 25 whole roasted almonds (20 whole, 5 chopped)
  • 1 cup dark chocolate chunks or chips (bittersweet, 72% cacao recommended)
  • Flaky salt (such as Maldon Salt), for topping

Instructions

1. Prepare the Dates

  • Slice each date lengthwise on one side to create an opening. Remove the pit and gently open the date, keeping it intact.
  • Arrange the pitted dates, open side up, on a parchment-lined plate or baking sheet.

2. Stuff the Dates

  • Fill each date with about 1 tablespoon of almond butter.
  • Nestle 2 whole roasted almonds into the almond butter in each date.

3. Melt the Chocolate

  • Place the dark chocolate chunks or chips in a microwave-safe bowl.
  • Microwave in 30-second intervals, stirring between each, until the chocolate is completely melted and smooth.

4. Dip the Dates

  • Using two forks, carefully lift each stuffed date and dip it into the melted chocolate, turning to coat evenly.
  • Let any excess chocolate drip off, then place the chocolate-covered date back onto the parchment-lined plate.
  • Repeat with all the dates.

5. Decorate and Set

  • While the chocolate is still wet, sprinkle the tops with chopped roasted almonds and a pinch of flaky salt.
  • Refrigerate the dates for about 20–30 minutes, or until the chocolate is set and firm.

6. Serve and Enjoy!

  • Enjoy straight from the fridge for a cool, satisfying treat. Store leftovers in an airtight container in the refrigerator for up to a week.
