Coconut Cinnamon Sweet Potatoes

Serves: 6 servings
  • 3 long (yet skinnier) sweet potatoes
  • Coconut oil spray
  • Cinnamon (to taste)
  • Sea salt (to taste)
  1. Preheat your oven to 450 F.
  2. Cover you baking sheets with parchment paper and spray with coconut oil.
  3. Wash and pat dry sweet potatoes, and cut into ⅛ inch rounds.
  4. Spread sweet potatoes rounds on pans, making sure they don't overlap.
  5. Spray coconut oil on every slice; sprinkle cinnamon and a bit of salt on top.
  6. Bake for 25-30 minutes, until potatoes are soft.
  7. Enjoy by themselves or with a favorite dip.
