This Egg White Scramble (With a Veggie & Protein Twist) makes for a wonderful morning start. Light and satisfying, and very nourishing.

  • 4 egg whites (if you want to add the yolks, you can)
  • ½ grilled chicken breast, cubed
  • 1 white mushroom
  • ½ zucchini
  • ¼ sweet pepper
  • ¼ avocado
  • Pinch of sea salt
  • Pinch of pepper
  • Coconut oil, for greasing
  1. Add a skillet over medium heat and add coconut oil, once melted, cook mushrooms zucchini, pepper and chicken until golden and fragrant, about 3 minutes.
  2. Pour in egg whites and cook until eggs have reached desired consistency. Remove from heat, season with salt and pepper, serve and top with avocado slices.
