Ingredients
4 egg whites (if you want to add the yolks, you can)
½ grilled chicken breast, cubed
1 white mushroom
½ zucchini
¼ sweet pepper
¼ avocado
Pinch of sea salt
Pinch of pepper
Coconut oil, for greasing
Instructions
Add a skillet over medium heat and add coconut oil, once melted, cook mushrooms zucchini, pepper and chicken until golden and fragrant, about 3 minutes.
Pour in egg whites and cook until eggs have reached desired consistency. Remove from heat, season with salt and pepper, serve and top with avocado slices.
