This easy to make Pesto Zoodles with Burrata Cheese and Basil recipe is a wonderful gluten-free meal, perfect for any time of year. Made with few ingredients and in less than 20 minutes!

  • 4 zucchinis, peeled
  • 3 tbsp extra virgin olive oil
  • Paleo pesto
  • ½ tsp oregano
  • Sea salt and freshly ground black pepper, to taste
  • Cherry tomatoes
  • Basil leaves, to garnish
  • Optional: Burrata cheese
  1. Use a spiralizer to noodle your zucchinis. Set aside.
  2. Place a skillet over medium heat and add olive oil; add in zoodles and cook until al-dente (slightly soft, about 3 minutes); add oregano and seasoning [I](salt and pepper) [/i]to taste.
  3. Add in the pesto and stir to distribute. Transfer zoodles to plates, top with cherry tomatoes, fresh basil, burrata and extra seasoning if desired. Enjoy!
