The Everyday Paleo Salad is a gluten-free, dairy-free and 100% paleo approved recipe that makes for a perfect side dish with any meal. Promise you'll lick the plate every time, it's that good!

  • 4 Persian cucumbers, peeled and sliced
  • 1 head butter lettuce
  • ½ -1 cup cheery tomatoes, halved
  • 1 ripe avocado
Balsamic Vinaigrette:
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2 garlic cloves, minced
  • ½ tsp. salt
  • ½ tsp. freshly cracked lack pepper
  1. Add all balsamic vinaigrette ingredients to a medium bowl and whisk vigorously to emulsify.
  2. Add avocado, cucumbers, lettuce and cherry tomatoes (if using) to the bowl with the vinaigrette; toss to combine. Enjoy!
