This Simple Coconut Bread is savory and has a wonderful coconut flavor. Wonderful for breakfast or for sandwiches for lunch.

Ingredients
½ cup coconut flour
1 tbsp baking powder
1 tsp xanthan gum (or ground flax seeds)
¼ sea salt
6 large eggs
⅓ cup coconut oil, melted
⅓ cup unsweetened coconut milk
Coconut oil spray
Instructions
Preheat oven to 350 F.
Grease 1 lb bread pan and set aside.
Whisk eggs, coconut oil and milk in a large bowl. Mix in coconut flour, baking powder, xanthan gum and sea salt. Pour mixture into greased bread pan and bake for 40 minutes, or until a toothpick comes out clean when inserted.
Let cool completely and refrigerate for 2+ hours, as this yields for better slicing.
