This Simple Coconut Bread is savory and has a wonderful coconut flavor. Wonderful for breakfast or for sandwiches for lunch.

  • ½ cup coconut flour
  • 1 tbsp baking powder
  • 1 tsp xanthan gum (or ground flax seeds)
  • ¼ sea salt
  • 6 large eggs
  • ⅓ cup coconut oil, melted
  • ⅓ cup unsweetened coconut milk​​​
  • Coconut oil spray
  1. Preheat oven to 350 F.
  2. Grease 1 lb bread pan and set aside.
  3. Whisk eggs, coconut oil and milk in a large bowl. Mix in coconut flour, baking powder, xanthan gum and sea salt. Pour mixture into greased bread pan and bake for 40 minutes, or until a toothpick comes out clean when inserted.
  4. Let cool completely and refrigerate for 2+ hours, as this yields for better slicing.
