Serves: 1 loaf (8 slices)
  • 1 ⅓ cups almond flour
  • ¾ cup unsweetened shredded coconut
  • 1 ½ tsp baking powder
  • 1 tsp sea salt
  • 8 eggs
  • ½ cup melted coconut oil
  • 1 ½ tsp apple cider vinegar
  • 1 tbsp honey
  • Coconut oil spray
  1. Preheat oven to 300 F.
  2. Grease 1 lb bread pan with coconut oil spray, and set aside.
  3. Combine almond flour, shredded coconut, baking powder, and salt in a large mixing bowl. Set aside.
  4. Add eggs to a standing mixer, and mix on low for 2 minutes; stop mixer, add in melted coconut oil, apple cider vinegar, honey, and mix for another minute or so. Add in dry ingredients and mix on low for another 2 minutes, until no lumps remain.
  5. Pour batter into the bread pan, and bake for 50 minutes or until a toothpick comes out clean when inserted.
  6. Let cool completely and refrigerate for 2+ hours, as this yields for better slicing.​
