Spinach, Peaches and Chicken Summer Salad

This Spinach, Peaches and Chicken Summer Salad is bright and crisp, perfect for lunch or dinner.
Serves: 1 serving
For the Salad:
  • 4 cups baby spinach
  • ¼​ cup​ baby carrots, sliced
  • 1 peach, cubed
  • ½​ cup blueberries
  • ½​ avocado, cubed
  • ¼​ cup​​ honey roasted pecans
  • 1 grilled chicken breast, sliced
For the Vinaigrette:
  • ¼​ cup​​​ balsamic vinegar
  • ¼ ​cup​​​ olive oil
  • ½​​ tsp grated garlic
  • 1 tsp honey
  • Pinch of sea salt
  • Pinch of black pepper
  1. Add vinaigrette ingredients to a mixing bowl and whisk tp emulsify. Set aside.​
  2. Place spinach in a salad bowl, pour vinaigrette, and toss to coat. Add in carrots, peaches, blueberries, avocado, honey roasted pecans and chicken. Add more salt and pepper if needed, and serve right away.
