Make strawberry rhubarb sauce: add rhubarb, strawberries, honey, water, and sea salt to a saucepan and bring to a simmer. Stir occasionally and cook for about 8 minutes, or until rhubarb breaks down; remove from heat and let cool.
Place all waffle ingredients in a food processor and process until smooth. Cook per waffle maker instructions. Batter should yield 4 waffles, so divide accordingly.
Serve right away with strawberry rhubarb sauce, or refrigerate for up to 4 days.
