Serves: 1 Waffle BLT
  1. You want to start with room temperature bacon, so allow it to sit on the counter for a few minutes before you start cooking it.
  2. Preheat cast iron skillet by placing it under medium heat for about 5 minutes. Lay bacon strips on skillet and cook both sides until crispy. Remove bacon from skillet and place it on top of paper towel to remove excess fat.
  3. Build your BLT. Spread Paleo Mayo on waffles. Place one waffle (mayo side up) at the bottom of a plate and add the following ingredients to your waffle in this order: one lettuce leaf, one tomato slice, avocados, bacon strips, one tomato slice, and one lettuce leaf. Cover BLT with another waffle (mayo side down). Voila. Dig right in!
