Description

These Cashew Clusters are just like peanut clusters, but Paleo approved. Made healthy, made easy. A must try recipe for the family.

Ingredients

Units Scale
  • 1 cup roasted cashews
  • 1/2 cup cacao powder
  • 1/2 cup coconut oil
  • 1/41/3 cup maple syrup
  • 1/2 tsp vanilla extract
  • 1/4 tsp sea salt
  • 2 tbsp unsweetened shredded coconut

Instructions

  1. Line baking sheet with parchment paper and set aside.
  2. Place a skillet over medium heat and add cashews. Since cashews are already roasted, all we want to do is get their flavors come back to life (roasted nuts can get a little stale from sitting on a shelf). Be careful not to burn the cashews, as soon as they warm up and become fragrant, remove from heat and transfer to a dish to cool completely.
  3. Place a skillet over medium heat and add coconut oil. Add in cacao powder, maple syrup, vanilla extract and sea salt, and stir to combine; remove from heat and let cool for 10 minutes. Pour into a heat proof bowl, fold in shredded coconut and cashews, and refrigerate for another 10 minutes. Make sure mixture doesn’t harden completely, keep an eye on it.
  4. Once mixture obtains a paste-like consistency, drop it by the spoonful on the lined baking sheet. Batter yields ~14 clusters. Place in freezer until hardened and enjoy.
