Description

This easy to make Pesto Zoodles with Burrata Cheese and Basil recipe is a wonderful gluten-free meal, perfect for any time of year. Made with few ingredients and in less than 20 minutes.


Ingredients

Scale
  • 4 zucchinis, peeled
  • 3 tbsp extra virgin olive oil
  • Pesto
  • 1/2 tsp oregano
  • Sea salt and freshly ground black pepper, to taste
  • Cherry tomatoes
  • Basil leaves, to garnish
  • Optional: Burrata cheese

Instructions

  1. Use a spiralizer to noodle your zucchinis. Set aside.
  2. Place a skillet over medium heat and add olive oil; add in zoodles and cook until al-dente (slightly soft, about 3 minutes); add oregano and seasoning (salt and pepper) to taste.
  3. Add in the pesto and stir to distribute. Transfer zoodles to plates, top with cherry tomatoes, fresh basil, burrata and extra seasoning if desired.
