Description

These Plantain Boats with Spicy Beef are fun to make and fun to eat, a delicious recipe that is packed with great nutrients.


Ingredients

  • 4 plantains
  • 1 lb. ground beef
  • 1/3 white onion, finely chopped
  • 4 garlic cloves, minced
  • 1/4 cup celery, diced
  • 1 serrano pepper, sliced
  • 2 tbsp chopped cilantro
  • 1 tbsp sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp ground cumin
  • Salsa, homemade or store bought
  • Cilantro, to garnish
  • Green onions, to garnish

Instructions

  1. Pre-heat the oven to 400 F.
  2. Cut plantains lengthwise across the middle, making sure you don’t cut all the way through, you want the plantains to be attached at the bottom. Cover plantains with aluminum foil, place them on a baking sheet and bake for 40 minutes.
  3. While plantains bake, place a skillet over medium heat, add coconut oil and cook onions and garlic until fragrant, about 5 minutes. Add in celery and serrano pepper and cook for another 2 minutes. Add in beef, helping it break apart with a wooden spoon, and stir beef constantly for about 3 minutes. Mix in salt, pepper and cumin, cover with a lid and cook for 10 minutes. Remove lid, stir and cook until the liquid evaporates. Remove from heat and mix in cilantro.
  4. Remove plantains from the oven, open foils and allow them to cool for a bit. Fill plantains with ground beef, salsa and cilantro. Enjoy right away.
