Turkey Thai Lettuce Wraps — a winning appetizer that is both delicious and nutritious.


Ingredients

For the Wraps

  • 1 lb ground turkey
  • 1 tbsp coconut oil
  • 1/4 chopped white onion
  • 3 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1 head of butter lettuce, washed and pat dried
  • 1 cup shredded carrots
  • 1 cup shredded purple cabbage
  • 1/2 cup lightly chopped cilantro
  • 1/4 cup chopped roasted and salted cashews
  • 1/4 cup diced avocado
  • Lemon wedges

For “Peanut” Sauce

  • 1/2 cup unsweetened coconut milk or filtered water
  • 1/2 tsp sea salt
  • 3 tsp apple cider vinegar
  • 2 tbsp honey
  • 1 clove garlic, minced
  • 1/2 cup almond butter
  • 2 tsp toasted sesame oil
  • 1/8 tsp cumin
  • 1/8 tsp ginger
  • Black pepper, to taste

Instructions

  1. Prep the “peanut” sauce ahead of time by blending sauce ingredients in a high speed blender until smooth and storing it in a tight lid container in the refrigerator.
  2. Now on to the wraps. Place a skillet over medium heat, add coconut oil and cook onions and garlic until translucent. Add in ground turkey and use a wooden spoon to break it down to help it cook. After 2 minutes of cooking, add in spices (cumin, cayenne pepper, sea salt and black pepper), stir and let cook for another 3 minutes. Cover frying pan, bring heat to medium-low and allow it to cook for 8-10 minutes. Remove from heat and set aside.
  3. To assemble wraps: grab a large butter lettuce leaf and add the following ingredients in your preferred order: ground turkey, cabbage and carrots. Sprinkle cashew pieces, add cilantro and avocado, squeeze a bit of fresh lime and drizzle some peanut sauce.
