Description

This Tomatillo Salsa is tangy, citrusy, refreshing and flavorful, everything you’d wish for in a summer salsa. Made in less than 25 minutes and extremely versatile. A must try.

Ingredients

Units Scale
  • 1 lb tomatillos, husked and halved
  • 1/2 white onion
  • 1 jalapeño pepper
  • 3 garlic cloves
  • 1/2 cup cilantro, stems removed
  • 2 limes, juiced
  • 1 tbsp coarse Kosher salt
  • 1/2 tsp freshly cracked black pepper

Instructions

  1. Preheat oven to 425 F. Place tomatillos cut side down on a parchment lined baking sheet, and roast for 20 minutes. Remove from oven and let cool.
  2. Once cool, transfer tomatillos to a high-speed blender, add in the rest of the ingredients, and process until desired consistency is reached. For chunkier salsa, blend less. Taste and adjust seasoning as needed. Serve with favorite chips and enjoy.
