I’ve been on a huge bread-making streak. My last three posts have been about bread. Can you tell I love bread? I do. Guilty as charged. It’s my weakness…I could eat loaf after loaf after loaf. 😉

I am not sure what’s causing my baking-drive lately. It might be the colder weather, the need of making and eating comfort food to welcome the holidays, the cozy feeling of being inside and relaxing over the weekends while the boys watch football…who knows. All I know is that I’m having a blast playing with spices and Paleo-friendly flours in the kitchen. Won’t you join me on this one? You and your family will love this Lemon Banana Paleo Bread. Lemon Banana Paleo Bread

Serves: 2 mini loaves (each loaf yields 6 slices)
  • 2 cups almond flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • ½ teaspoon sea salt
  • ¼ teaspoon ground cloves
  • 2 ripe bananas, mashed
  • 2 medium eggs, whisked (must include yolks)
  • ¼ cup honey
  • 1 tablespoon fresh lemon juice
  • ½ lemon, zest of
  • Slivered almonds (around 2 tablespoons, to top)
  1. Preheat oven to 350 degrees.
  2. Mix dry ingredients (almond flour, baking soda, cinnamon, sea salt and ground cloves); set aside.
  3. Mix wet ingredients (bananas, eggs, honey, lemon juice and lemon zest) and set aside.
  4. Incorporate dry and wet ingredients. Mix well.
  5. Pour mixture, equally divided, into your two mini bread pans.
  6. Sprinkle 1 tablespoon of slivered almonds on top of the mixture in each of the bread pans.
  7. Bake for 45 minutes (make sure you do a toothpick test to see if bread is done once those 45 minutes have passed).
  8. Let cool and enjoy! (I personally like to refrigerate my bread overnight and enjoy the next day, as mixture has solidified and bread stays put when sliced.)
