It’s only Thursday and I’m already excited about the weekend! I am a weekend-sucker. I ADORE weekends. But I think we all do. Amiright?!

The weekend brings promise. We are free to do whatever we want, whenever we want to do it, and whomever we want to do it with. When I think “weekends”, I think “freedom”…we have the freedom to slow down, to recover, to reconnect, and to engage in the activity of our choosing. #haleluya

Weekends are when people are at their best too; they are their happy and relaxed selves again. People get to sleep-in late and stay-up late, they get to explore and go on road trips, to be adventurous and try new things, and to hang out with the people they enjoy the most. Weekends are bomb. Friday afternoon…get here already!

This summer, my husband and I have spent our free time being creative, having crazy good times with friends, going on hikes, biking around the city, binge watching TV shows on Netflix, going to local movie theaters, planning trips, enjoying countless glasses of wine, dining out, and simply bumming out. Summer has treated us well thus far. We can’t complain. We are blessed to have amazing people in our lives too, and that’s what makes everything THAT much better.

This past weekend was a great one for us. It started as early as Friday, per usual. My husband’s work had a company-wide BBQ; they had lots of food, good drinks, fun activities for the kids, a photo booth, you name it. Bodybuilding.com is a wonderful company to work for; everyone there is kind, fun and fit! My hubby and his coworkers (his buddies) love where they work, and as for us…the wives…well, we have a TON of fun too! 😉 Never a dull moment when we meet up, that’s for sure. So, after the company’s BBQ, we went on a double date with some friends to a local restaurant. And the party kept on going for us; we were up enjoying good wine till the late hours of the night. It was a blast.

Then, on Saturday, we had another BBQ to attend to. This one was held at the CEO’s house (who just happens to be our really good friend as well); one of our close friends helped him with coordinating the BBQ, and she did a fabulous job. 100+ of us were well taken care of and had a blast under the sun! At this BBQ, there were bounce houses for the kids, a full bar, catered food, a pool, beer pong, good music…and wonderful people to interact with. It was a great, great time.

Then, on Sunday, I woke up and made these Strawberry Macadamia Nut Waffles for my handsome man, along with some eggs and bacon. After we both devoured our breakfast, I cleaned up quickly and hustled to get ready for yet another BBQ invitation (#yolo)…except this BBQ was to be held at OUR HOUSE! We invited two good friends over for some food and drinks. I absolutely loved having them over; one-on-one time with good friends is great, because you get to dedicate your time and attention, and bond at a deeper level. It was a different type of BBQ than the two we’ve had the days before, this one was way more low key. I served our friends my Ecuadorian Shrimp Ceviche, a nice summer salad, filet mignons, and finished it up with one of my brownie recipes. We were all full and content by the end of it.

So there you have it. That’s what we did this past weekend, and I CANNOT WAIT to form new memories with friends in the next few days!

These Strawberry Macadamia Nut Paleo Waffles are comfort food at its finest. Nourishing, delicious and easy to make.
Ingredients
  • 1 cup roasted and unsalted macadamia nuts
  • 3 tablespoons + 1 teaspoon coconut flour
  • ¾ teaspoons baking soda
  • ¼ teaspoon sea salt
  • ½ cup full fat canned coconut milk
  • 2 tablespoons honey
  • 3 eggs
  • 3 tablespoons coconut oil
  • ½ teaspoon vanilla extract
  • ½ cup [url href=”https://www.amazingpaleo.com/2013/06/24/strawberry-rhubarb-sauce/”]Strawberry Rhubarb Sauce[/url] [i](to top waffles)[/i]
Instructions
  1. Make strawberry rhubarb sauce: add rhubarb, strawberries, honey, water, and sea salt to a saucepan and bring to a simmer. Stir occasionally and cook for about 8 minutes, or until rhubarb breaks down; remove from heat and let cool.
  2. Place all waffle ingredients in a food processor and process until smooth. Cook per waffle maker instructions. Batter should yield 4 waffles, so divide accordingly.
  3. Serve right away with strawberry rhubarb sauce, or refrigerate for up to 4 days.
