One of my favorite things is to enjoy a warm beverage right after lunch or sometime in the late afternoon. I love having a hot drink with me while I work, as it brings comfort and it gives me that extra little push of motivation.

Coffee used to be my go to, but since I am trying to cut down my caffeine intake a bit, I had to get creative. So, what do I do? I turn to chocolate, of course.

I love chocolate. I seriously could have it 24/7. Part of me likes to think that I love it so much because I come from a country (Ecuador) where the best cacao in the world is grown, so it’s in my DNA. If you haven’t had some Ecuadorian chocolate, I highly recommend you do! (By the way, some of the best coffee is grown in Ecuador too…so I guess I am predisposed to loving that as well. Oyy. #doomed.)

Anyway, I am obsessed with hot cocoa. That sweet, hot, rich cup of deliciousness is something I look forward to every day. It’s comforting and it takes me to that next level of feeling those good endorphins.

I didn’t want to spend a lot of time crafting my drink, so I have kept things easy and simple. I have only been using 3 ingredients to prepare it: cashew milk, unsweetened cocoa powder, and honey. That’s all there is to it and that’s all you need. Sometimes I’ll go crazy and sprinkle some cinnamon or nutmeg on top.

Ingredients
  • 12 ounces cashew milk ([url href=”https://www.amazingpaleo.com/2015/09/02/how-to-make-homemade-cashew-milk/”]homemade recipe here[/url])
  • 1 1/2 tablespoons cacao powder (or add according your personal preference)
  • 2 tablespoons honey (or add according your personal preference)
Instructions
  1. Add all ingredients to high-speed blender and blend on high for 2-3 minutes.
  2. Pour on favorite glass, top with cinnamon, nutmeg or cacao nibs. Enjoy!
