Today I have 3 Chia Seed Pudding Recipes for you guys. Not one, but THREE.

What I love about these cute chia pudding jars is that you can make them the night before and enjoy them right away the next day for breakfast or as a snack. Also, they are the perfect size; they are not too large, so you don’t feel like you are stuffing your face, and they are not too little, so you don’t feel like you barely got to have any. Each of these will keep you full and satisfied.

I typically enjoy one of these paleo chia puddings either before a workout or whenever I feel like I need a little pick-me-up to get some work done. They give me SO much energy, it’s insane. Seriously.

Like the other day, I had one of these 8 oz jars, and I was able to bust out four new recipes for my blog, got them all photographed, cleaned my kitchen, cleaned the rest of my house, did laundry and got dinner ready for when my husband got home. And all of this was done after a one and a half hour workout too.

I’m telling you, chia seeds are mighty powerful.

I made these three delicious chia pudding flavors, because I didn’t know exactly what I would be craving the following day after letting them sit overnight (as you’ll see the recipe mandates). Plus, having a little variety never hurt anyone! In fact, having all these flavors available was kind of fun. On a few occasions, I found myself getting extra creative and layered two flavors in one jar, with fruit in between each flavor. So tasty!

Smooth Cacao Chia Pudding

These 3 Chia Seed Pudding Recipes are delicious, satisfying and energizing. The perfect paleo breakfast or snack to have to conquer a busy day!

Serves: Two 8 oz. mason jars
Ingredients
  • ½ cup full fat canned coconut milk
  • ¾ cup unsweetened carton coconut milk
  • 1 heaping tablespoon cashew butter (homemade recipe here)
  • 2 tablespoons honey
  • 2 tablespoons unsweetened cacao powder
  • ½ teaspoon vanilla extract
  • ¼ cup chia seeds
  • Toppings of choice: fruit, nuts, seeds, nut butters, seed butters, nut milks, seed milks, and/or Paleo Mixed Berry Jam.
Instructions
  1. Place milks, cashew butter, honey, cacao powder and vanilla extract in blender and blend on high until smooth.
  2. Pour mixture in mason jar; add chia seeds, cover jar tight with lid and give it a nice shake until ingredients are well mixed.
  3. Refrigerate overnight. (Give mason jar a nice shake, 45 minutes after refrigeration, to make sure chia seeds don’t sink to the bottom and are able to mix thoroughly -- you can do this a few times to ensure proper blending. If chia seeds are being stubborn, open up jar and use a spoon to mix).
  4. In another mason jar, or small bowl, layer the chia seeds with your topping of choice. I had mine with bananas, berries, and a dollop of Paleo Whipped Cream.

  • ½ cup full fat canned coconut milk
  • 1 cup unsweetened carton coconut milk
  • 1 heaping tablespoon all-natural sunflower seed butter
  • 2 tablespoons honey
  • ½ teaspoon vanilla extract
  • ⅛ teaspoon cinnamon
  • ⅛ teaspoon all spice
  • ¼ cup chia seeds
  • Toppings of choice: fruit, nuts, seeds, nut butters, seed butters, nut milks, seed milks, and/or Paleo Mixed Berry Jam.
Instructions
