Hello my wonderful Amazing Paleo people! I am so sorry I’ve been MIA these last few days. I have missed blogging SO much.
Life is crazy right now for my little family (me & hubby). We’ve rented our house and moved in with our in-laws, for about a month, until our new apartment is ready (we are remodeling it and making it look super cool).
Let me just tell you, this remodeling has gone wild and it’s taking way longer than expected. Hopefully we’ll be all moved in our new place soon. Being at my in-laws has been nice though; they are such great people and we feel very blessed to have them as family. My hubs and I are staying at their guesthouse, so it’s been fun to have our privacy with our own kitchen and bathroom. However, being in a small guesthouse means limited kitchen gadgets and tools (most of my stuff is in storage), so I ask for all of you to be patient with me at the time being. My recipes will still be wonderful, but nothing too fancy .
Another crazy thing in my life is my new job. It’s a great job and a fantastic opportunity to develop my career, but I’ve only been at it for 3 months, so I am still learning and putting in extra hours to make sure all that needs to get done, gets done. This is yet another reason as to why I have not been blogging too much.
I’ve been with my hands full. Once we’re all moved in to our new place my life will be in order again, so don’t you worry friends, Amazing Paleo will receive lots of love soon enough.
Today I am leaving you with one of our current favorites: Spiced Ground Turkey. It is so yum! It asks for simple and common ingredients (most household will have), it’s easy to make, and you can combine it with lots of dishes. Your family will love it, guaranteed. It’s also a great lean protein source…it doesn’t get better than that, ey?! Enjoy.
Tools You’ll Need:
- Skillet with lid
- Wooden spoon
- Measuring cups
- Measuring spoons
- 2 (1.25lb) packets of ground turkey – I used 93% fat free
- 1/3 cup of purified water
- 1 tablespoon black pepper (or, to taste)
- 1 tablespoon sea salt (or, to taste)
- 1 teaspoon chili powder
- 1 teaspoon chipotle chili powder
- 1 tablespoon red pepper flakes
- ½ teaspoon cayenne pepper
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon Herbes de Provence
- ½ teaspoon Lemon pepper (optional)
- Finely diced green onions (for garnishing)
- Make sure your turkey is thawed, and that your needed ingredients and kitchen tools are out/ready to use.
- Place skillet under medium heat, add ground turkey and purified water (we add the water so the turkey doesn’t stick/burn).
- Using a wooden spoon, break down the ground meat; this will allow it to cook well. (Note: Here, you can either close the skillet with a lid or leave it open; if you add the lid, your turkey will probably cook faster)
- Add the rest of the ingredients…all of those tasty spices!
- Using a wooden spoon, stir ingredients together. You want your ground turkey to get an even taste of all that spice!
- Cook for about 15-20 minutes, or until your turkey meat is no longer pink.
- Let cool for a bit and top with green onions.
* Makes 10 servings
* Nutritional Information (per serving): 173 calories; 7g fat; 1g carbohydrates; 20g protein.
* Note 1: You can eat this by itself, with a side dish (Brussels sprouts go great with it), or my favorite, in a lettuce wrap.
* Note 2: For the lettuce wrap: Spoon turkey on lettuce leaves, add shredded carrots, mushrooms, green onions and sprinkle almonds on top; proceed by folding the lettuce sides over the filling and roll up.
