Plantain Cake


An ingredient that reminds me a ton of my beautiful home country, Ecuador, is the glorious plantain. And that’s because my beautiful mother, who still lives in Ecuador, used to make us plantain treats nonstop. Both Ecuador and my mom are constantly a part of my thoughts, but this time a year, I think of both extra strong because of Mother’s Day. So to celebrate and honor my mommy on her very special day, I decided to bake this gorgeous Plantain Cake in her name.

This Plantain Cake is an easy-to-make Latin American treat that can be enjoyed any time of day. You can have it for breakfast, brunch, as a mid-day snack, as a late-night snack, etc.

It is made with only eight ingredients and it takes little to no time to prepare. And want to know my favorite part? It’s extremely nutritious! Why? Because I’ve added some awesome ingredients to it that work wonders for our bodies. Yes, a few plantains, but also, a few scoops of Collagen Peptides!

Collagen Peptides are currently my latests obsession, and I find that I don’t want to go one day without taking this supplement. I add it to my smoothies, coffee, water, baked goods, salad dressings, you name it. It’s a supplement that is super easy to dissolve, it’s tasteless and it is pretty easy on the stomach.

Collagen is the most abundant protein in the body; it’s what keeps us young looking and young feeling. However, we stop collagen production at the age of twenty five, so now that I am twenty nine years old, I’ve decided to intake collagen and make it a part of my every day routine. If I can help it, I will age slowly and with grace, thank you very much (wink wink)! My husband and I both take it, and have seen major changes in our skin, nails and hair. Our hair is growing fast, our nails are strong (never break and are as hard as a rock) and our skin is as smooth as a baby’s butt. LOL.

If you guys are not currently taking Collagen Peptides or haven’t tried the product yet, I highly suggest you look into it and decide whether or not this is something your body needs. My husband and I didn’t know we needed it until we heard of it and started taking it, and I am definitely glad we did. Be sure to check it out, friends. So not only does this recipe carry Collagen Peptides, but it also calls for my beloved plantains! Plantains are a potassium-rich food that have similar nutritional properties to the banana. Gotta love them!

This easy to make Plantain Cake is a nutritious Latin American treat, that is gluten free & dairy free! It can be enjoyed any time of day!

Ingredients
  • 3 plantains, peeled and diced
  • 4 eggs
  • 2 scoops collagen peptides
  • ¼ cup ghee, + 1 tablespoon for greasing
  • 2 tablespoons honey
  • ½ teaspoon vanilla extract
  • 1 teaspoon apple cider vinegar
  • ½ teaspoon baking soda
  • Pinch sea salt
Instructions
  1. Grease pan and set aside.
  2. Preheat oven to 350 degrees Fahrenheit.
  3. Place all ingredients in a high-speed blender and blend on high until smooth.
  4. Transfer batter to pre-greased baking dish and bake for 25 minutes.
  5. Slice and enjoy!
