Yum! I love Coconut Lemon Paleo Pancakes! I’ve shared plenty of waffle recipes with you guys, but never a pancake one. One of my readers requested for me to post a good pancake recipe, so this one is for her!

Coconut-Lemon Paleo Pancakes

Serves: 4 small pancakes
These Coconut-Lemon Paleo Pancakes are delightful. Zesty, sweet and nutty. A must try!
Ingredients
  • 1 cup almond flour
  • ½ tsp baking soda
  • ¼ tsp sea salt
  • 3 tbsp full fat canned coconut milk
  • 1 tbsp honey
  • ½ tsp vanilla extract
  • Zest of ½ lemon
  • 1 egg
  • Coconut oil, for greasing
Instructions
  1. Mix almond flour, baking soda and salt in a large bowl. Set aside.
  2. In a separate bowl, whisk coconut milk, honey, vanilla extract and egg. Pour over bowl with dry ingredients, mix until no lumps remain and fold in lemon zest
  3. Place a skillet over medium heat and add coconut oil.
  4. Once skillet is hot, add about 2 tbsp of the batter to form a small pancake (anywhere between 2″ or 3″). These pancakes are delicate so cook them one at a time. Cook each side for 3-4 minutes, or until golden. Repeat until all batter is used. Serve warm and add favorite toppings.

    1. Hey Katherine 🙂 I had originally added blueberries to the mix, but then decided to take them out. Thanks for letting me know the blueberries were still showing in the “steps” area. You can most definitely include the blueberries though, I am sure it will be a fantastic addition to the lemon taste!

    just wondering how many pancakes are 1 standard serving?

    also, are these ok to eat as a treat only, or can they be eaten for breakfast in the mornings?

    These small pancakes are very tasty. However, they have too much saturated fat (Coconut). I changed the full-fat milk for the lightest one possible. I also cooked with coconut oil (as vegetable oil would have burned). I put the fire slightly lower too and it was amazingly delicious.
