I think I’ve told you guys this before, but every Sunday, my husband and I have a Paleo breakfast feast at home. As soon as I wake up, I head to the kitchen, get my pans out, my ingredients out, turn some calm music on, and get cookin’ for my hubby and I. We love it! It is our tradition. We get to spend quality time together and enjoy delicious food that is very healthy too.

I like making my own breakfast feasts, versus going out for them, because you truly never know the quality of ingredients they serve you at restaurants, the true cleanliness of the kitchen they prepare their food in, nor the cleanliness of the hands that prepare it. SO, homemade is always the way to go for us! The foods I cook never get us sick or make us feel stuffed, and cooking it myself allows for a complete peace of mind.

This weekend I made us some delicious uncured bacon (cooked it in my cast-iron Le Creuset pan), fresh scrambled eggs cooked in coconut oil, and some delicious Paleo waffles made with cashews and pecans. It was amazing. We enjoyed every last bite. And today, I am sharing my cashew waffle recipe with you! They are so fluffy, sweet and satisfying. You’re going to love these waffles!

After our feast, we participated in another tradition of ours. One that became a tradition just recently (a few weeks ago,) and one that we can mostly do in summer months (or whenever weather permits). After breakfast, we jumped on our cruiser bikes and rode all to the bottom of the Boise foothills from our home. We locked our bikes, and then hiked all the way to the top of the hill! It was a fantastic workout. While we were climbing, we got to chat about life, got a good sweat on, got some good sun on our skin and absorbed Vitamin D, and were able to enjoy the beautiful city of Boise when we reached the top.

Sweet Cashew Waffles

Serves: 4 waffles
Make these Sweet Cashew Waffles using a blender. Easy cleanup, quick to make and absolutely delicious.
Ingredients
  • ¾ cups raw cashews
  • ¼ raw pecans
  • 4 tbsp coconut flour
  • ¾ tsp baking soda
  • ¼ tsp all spice
  • ¼ tsp pumpkin pie spice
  • ¼ tsp sea salt
  • 3 eggs
  • ½ cup full fat canned coconut milk
  • 3 tbsp coconut oil
  • 3 tbsp honey
Instructions
  1. Place all ingredients in high-speed blender and blend until smooth.
  2. Cook per waffle maker instructions. Batter should yield 4 waffles, so divide accordingly.
  3. Serve right away with favorite toppings, or refrigerate for up to 4 days.
