What I love about this Apple Cider Vinaigrette is that it serves two big purposes. The first is that it enhances the taste and enjoyment of our salads and vegetables, and the second is that it provides amazing health benefits. Keep it in the refrigerator in a tight lid jar for up to 2 weeks; but I have a feeling it will be gone before then. Use it freely, and use it often!

Just an idea: drizzle it on top of a bowl of massaged kale, quinoa, roasted sweet potatoes/vegetables with nuts and seeds. It would make the perfect gluten-free bowl for a cozy stay-at-home lunch or dinner. Use whatever vegetables are in season for optimal taste and freshness.

Ingredients
- 1 cup extra virgin olive oil
- 1/2 cup apple cider vinegar
- 3 tbsp honey
- 1 tsp dijon mustard
- 2 garlic cloves, grated
- Salt and pepper, to taste

- Transfer to an airtight container and refrigerate until ready to use.
