A good waffle can really steal the breakfast show. And that is because waffles have texture, volume and flavor. But best of all, they go with just about any topping! Think maple syrup, honey, berries, bananas, oranges, nuts and seeds. Oh lawwwdy, they are pure bliss.
Preston and I are huge fans of breakfast and brunch. He is also a fan of brinner, which I am not. But it’s really cute for me to see him randomly crave breakfast at night, as I feel like I get a small peek into how he must’ve been when he was a little boy with random cravings and such. Therefore, even though I don’t love making breakfast at night, I’ll still do it for him when he craves it because I think it’s adorable.
During the work week our mornings are busy, so we don’t really get too fancy nor creative with our breakfast. However, come Saturday and Sunday, we’re all about them breakfast foods. We get super excited about it too, and we try to make a “thing” of it.
To make sure we make the most out of our weekend’s breakfasts, we follow a few steps. First, we put on our cozy bath robes to get nice and comfy. Second, we open all the blinds and windows to let some fresh air and sun in. Third, we turn some chill music and set a welcoming table together. And lastly, we get the feast started!
Most of the time, I’ll have all the ingredients I need at home. However, when I don’t, I quickly put on something casual on, make myself a to-go blended ghee coffee, and head to Whole Foods real quick. Luckily Whole Foods is five minutes away from where we live. At the store, I typically end up getting organic eggs, bacon, fresh berries, bananas, non-dairy milk, maple syrup or honey, and a bunch of healthful ingredients for waffle making.
Since make our waffles with Paleo ingredients only, my favorite flour combination to use is cashew and coconut. As a result of using these two flours, the waffles turn out moist and they hold really well.
